Mark,

Use the "Organization" field in emails to put whatever you want into the 
header.  Start the field with a carriage return, so the header starts a 
new line, and then add whatever text you want ("Sensitivity: 
Company-Confidential" in your case).

Hello Listers,

I want to add Sensitivity: Company-Confidential to all outgoing e-mail
headers of e-mails that are sent by our AR System. Any idea how? I
tried to enable SSL in the Email Engine configuration and since then
my e-mail engine can't send any e-mail. When disable the flag
everything works just fine.
