I do not see the benefit of upgrading the server first at all. In my opinion, if there is anything that can break it could happen if you upgrade the server first.. Web service integration I think could be one of the things you could risk by upgrading the server first... Simple example could be the version where web services were first introduced (5.5??). What if you upgraded the server first and then try to set up web services? Would it work? Even now I bet there is a chance web services if setup could fail if the mid tier version is below the server version..

The reason being that if the server offers a new piece of functionality on the client, the client will not be able to take advantage of that functionality until its upgraded.. I wouldn't keep a gap of more than a version though. Backward compatibility is perhaps better tested on one version by software manufacturers..
