You could customize the workflow to do a push fields directly into the AR 
System Email Messages form. Then you can set the From and Reply To addresses to 
anything you need. i.e. The user sending the email.

Hi All & TGIF, 
  
In the Incident or Change you can select Functions > Email System and send an 
email. I want to have a different from address than the mailbox default. I 
could not find in the ITSM Admin Guide or the Notification Guide where this 
could be changed, assuming it can. If there is a guide for the “Email System” 
it would be great to know. Otherwise if someone could give me some ideas on 
where to go to customize the From address.
