I'm also experiencing the exact same problem.  I thought I had got closer
when I:

sudo -u artifactory bash

And then then:
echo $JAVA_HOME

Which returned nothing even though I had exported JAVA_HOME in /etc/profile

I can't quite figure out what's happening.  I added the exports for PATH and
JAVA_HOME in the /home/artifactory/profile config file, and now when I
change to the artifactory user, I get JAVA_HOME showing up correctly but it
still won't install.
