Not seeing a reply (I realize people are busy, so that's not a complaint), I 
started over again, from scratch, and I now have a settings.xml file that 
allows our projects to build against the new Artifactory server with no 
warnings or errors (at least none that aren't developer caused, anyways). I 
poured over the wiki, then just started over with the default settings.xml file 
that Artifactory generated for me. As it turned out, the only thing I had to do 
to that, was to add the appropriate <server> entries, so that artifacts could 
be deployed. As for the mirroring I was trying to do before, I read in the wiki 
that a different/better solution was to set "Cleanup Repository References in 
POMs" to "Discard Any Reference", for all Virtual Repositories, so I handled it 
that way. As for overriding the built-in Maven repositories, the default 
settings file that Artifactory generated did that.

I'm learning, slowly, but surely. :)
