Modulation is interesting because it allows multiple signals to share  
the same "waveform."  In the case of perception, our pitch is used to  
modulate the speech signal.    Our perceptual system seems to care  
about the modulations in the energy in each auditory channel.    
Demodulation is the purest form of the cocktail party problem.

Modulation is interesting to the DSP folks because it is inherently an  
ill-posed problem.  Modulation consists of multiplying a carrier  
(usually at a high frequency) with an information-bearing signal.
