In short: I had the same concerns and helped during the setup of the acutal Griplist on SF and had some glimpse into the funtion of the list. For the moment the Griplist is as secure as an open system could be. In Addition the results are for weighting the spam level only ,not for blocking.
There are some ideas to protect the griplist further, which could be set in place very easy if necessary.
