I don't know anything about this stuff other than what I've read and played
with on my WRTs.  I'll tell you what I -think- I know and maybe that will
get you a few steps further.

I think you have to crack one open and see what flash chip and processor is
being used.

You might be lucky enough that the HairyDairMaid JTAG software would backup
one of those units if you could figure out what the starting addresses and
sizes were.  Again, I'm no expert but it might be possible to backup one of
the SIP phones (assuming you could get your hands on one) and then upload
that firmware into the phones you've got.

I've got a JTAG cable that you could borrow if you felt adventurous.
