Trixbox is easy to install, but I would say more difficult to learn from as the configuration files that make it all work are more complicated than the ones that come with a clean asterisk install.
I haven't looked at AsteriskNOW yet. If you'd like a really clean and simple pre-built asterisk system to learn from, I'd recommend running AstLinux inside vmplayer and a softphone. If you're also new to Linux and editing text files on a Unix system though, Trixbox/AsteriskNOW would probably be a better starting point.
