I'm not really sure about IAX but your Asterisk server should be staying
in the call signaling path.

Keep in mind that call signaling and audio path are separate things.
Your server can stay in the signaling path while the audio path never
leaves Unlimitel.

A "reinvite" will normally renegotiate the audio so it travels directly
between the two endpoints while the server stays in control of the
signaling.

AFAIK this is the default behavior but if you are not seeing the calls
in your logs after they are bridged at Unlimitel then it may be just an
option that needs to be tweaked to keep Asterisk in the signal path.
