I've also used Unlimitel and they work quite well and give you up to 5 lines
per DID.

Zoiper works quite well, especially if the computers are going to be roaming
on other networks (i.e. people taking their laptops home) since it uses the
IAX2 protocol which can punch through firewalls better than SIP can.

For testing, I've used Ekiga (a SIP client) on my Ubuntu machine without
issue.
