Thanks guys for your response. I think Fax is going to be a real headache and I will be encouraging where possible to move to a hosted service. Alarm and EFTPOS is likely to move over to GSM/3G or newer broadband as you mentioned David.

The "Deutsche Telekom" (ex-monopolist and main telco) will change all analogue and ISDN (we have a lot here) to All-IP until 2018. They don't REPLACE copper everywhere, but new locations will be installed with new technologies . Receiving faxes directly in Asterisk with SpanDSP (and sending them as PDF via email) works quite good in my experience. Some hardware faxes work fine with ATAs (or media-gateways like Bero*fix) too, but some have some issues with sending faxes. For electronic payment systems (here mostly ISDN), you'll also need media-gateways. Alarm systems can be quite tricky, but at this point in time the telco make exceptions for those lines.
