Here are two more cases in which it is only possible to force to use the dollar sign $ in an embedded math environment by C-q $:
This are:

  \minipage

Examples:

  quad\text{in $\Omega$.}$}
\end{equation}

\begin{equation}
  \label{eq:2.1}
  \left.\begin{minipage}{0.75\linewidth}
    \begin{enumerate}
    \item $T$ is a smooth open set with a $C^2$ boundary.
    \end{enumerate}
  \end{minipage}\right\}
\end{equation}
