It's not always as random as all that, actually. There are techniques for mapping systems, automated exploration programs, and a way to move to any point in space with the autopilot. THere are also improved scanners which pretty much guarantee you'll see something within a big range.

COmbat is harder, certainly, but not impossible. Merchant ships should probably avoid it, but fighters can do pretty well. There are of course programs to automate that as well.
