QC is only for playing other people. I don't know what you didn't like in particular to give a better explanation, but playing Chess is farily simple. All you do is press enter on the piece you want to move, then enter again on it's destination square. You have shortcuts like Ctrl left and right to reach left and right edge, as well as Ctrl up and down. You have different things like P to jump to the next available pawn, K for king, N for knight, R Rook, B Bishop and D queen.
Those should be basics to get you started, but you can of course ask anything specific.
As for playing offline, there are many programs. Some people use Winboard, though for a beginner, BG Chess challenge from Spoonbill games is actually very decent. This one is self voicing using Sapi, and has difficulty options for the computer player. Later if you need more advanced AI you can always find a mainstream program.
