I am having no trouble doing this on the Windows client. You need to go home first (control 1) then enter the server tree view and find the explore servers options at the bottom, then hit enter on it. You can then use the search field, filter results, ETC.
Anyone who has a discord server is likely to put the link to it in their other media anyway in my experience, be it youtube videos, subreddit sidebars, steam/itch pages ETC.
Discord can be used for general topics sure, but it's not the main purpose. I agree that this is a problem on the web especially, but not as much as you believe it to be IMO.
Either way I hope it gets fixed soon. This is the biggest issue I have with Discord's accessibility, they fix, then break, then fix, then break, and communication/response to feedback is basically nil.
The access to mainstream communities is worth it though.

If you aren't even willing to adapt to this, how do you expect to play mainstream games?
I'm not saying it's great, but neither are most of those.
