There is a skill called potion lore that allows you to see what your results and the chances of producing said results are. As you level mage more, there are also skills like reagent lore and brew focus that allow a player to fine tune their brewing capabilities further.
Coldfire is a damage spell, as well as a source for a spellcomp, but is basically used exclusively as a spellcomp generator at mid to high levels. Even if you wear a full set of necro cast level, a coldfire will do almost no damage.
In terms of the level changes, Dentin has been geographically cleaning the newbie islands to ensure that areas that have exits into new areas are similar in level so newbies don't wander into an area and suddenly die in a single hit. There is a large amount of releveling in areas to make the newbie experience much more fluid and seemless without any sudden level gaps.
There are a couple harder mobs in most areas that may either be fame mobs or necessary to kill for deeds. These mobs may be more difficult, but shouldn't destroy you if you are within the recommended levels. Keep in mind that most casters should be wearing a decent amount of cast level when they are trying to generate a ton of damage quickly, and that warriors and thieves need hitroll, damroll, and a good weapon to achieve this. Having defensive spells in place, most importantly sanctuary, will also make a world of a difference. Watching the mob will also let you know what kinds of damage the mob is using to hurt you, and you can reduce damage done to your hp significantly by wearing the proper saves, also known as resistances, to counter it. If you are still having trouble, there's no shame in asking for help and just bum rushing the mob with a group to take it down, haha.
Finally, the game is very friendly to class reorganization, and with a chunk of experience you can reorder your classes without too much of a problem. The game is really forgiving so that characters don't feel like they need to restart, as repair is in many cases a cheaper and less taxing process. Restarts are available though, in case someone does want to completely reset themselves.
