That's right about .mp3 licensing. The Unity engine used to be able to use them, but it switched to .ogg. So you can use compressed sounds, they just have to be in the .ogg format. If the .mp3 patents expire then who knows, but Unity made the switch and .ogg isn't a bad format. Entombed 1 used entirely .wav format - not because I felt it needed .wav, but that's all the XNA engine allowed.
As far as new pets, yes, that's entirely possible. You can make them anything you dream up.
