The new Fiona Apple album, "Extraordinary Machine" has well recorded (and played) piano by Ms. Apple. Also, check out Vienna Tang, if you haven't heard her. She is one of my favorite singer/songwriter/piano pop musicians.
In the classical genre, one of my favorites is Martha Argerich playing Tchaikovsky - Piano Concerto No. 1 (Deutsch Grammophon).
