If you really wanted to do it right, you'd have a really high quality phono setup, something like a Benchmark ADC, and you'd record everything in 24 bit, 96khz format.
You'd have to have lots of hard disc space though. And you've have to make additional copies downsampled to 16 bit 44khz if you wanted to make red book CDs.
