I follow two general rules when I rip my LPs.

1.  I vow not to do any kind of pop/click cleaning when initially
ripping my collection (except very, very, minor things).  This avoids
the slippery slope you talk about.  The theory is that if you store the
final file in a lossless format (which we all do, right?), you can
always do this later.  This (a) avoids slowing the ripping process and
causing frustration, and (b) future-proofs you in a way, since you can
treat the initial rip as your "raw" file, and improve on it as future
software improvements are made for audio processing.

2.  I stack rank my albums before ripping.  I realize this sounds
obvious, but make sure your favorite/cleanest albums are ripped first. 
This ensures that your favorite tunes are available soonest, and also
saves wear and tear on your needle until you hit the dirty stuff at the
bottom of the pile.
