The knob is an Immersion TouchSense Programmable Rotary Module PR-1000. They have some info at http://www.immersion.com/industrial/docs/TSRotary_Oct04_v3_LR.pdf but it's not really a data sheet.
I've filed bug 4247 (http://bugs.slimdevices.com/show_bug.cgi?id=4247) as an enhancement request for a Slimserver setting to make the knob behave like a volume control at power-on.
