The simple answer is that it is extremely unlikely that you will hear the difference. 256kbps should be transparent for almost all music and almost all listeners. I would go as far as to say you will not hear the difference. If you do decide to use MP3 I would strongly recommend using LAME for encoding as it is superior to all other MP3 implementations and performs at the same level, if not better, than Apple's excellent AAC implementation. To learn more on this subject I would suggest visiting the Hydrogenaudio forums. I use FLAC for my archiving as disk space is plentiful these days.
