I recently used 'Audacity' to produce a 48/24 version of The Beatles
Love DVD-A for my SB (rather than just using the 44.1/16 CD version
that came with it. Audacity is a great tool as it also gives a visual
represenation of the tracks, so you can visually compare the different
qualities as well as by ear. Interestingly the 44.1/16 and 48/24
version looked very different - the 44.1/16 seemed to be a lot louder
(ie with lots of peaks at -0db) whilst the 48/24 version was much more
variable (ie more difference between quiet and loud sections). The
compression used in mastering the 44/16 version is very obvious.

Audacity is also supports 6 channel wav files and can merge those into
a stereo track. 

BTW, I used PPCMRipper to create the 6 channel WAV from the DVD-A/MLP
disc.
