Yes, in fact Neumann makes a binaural 'head' called Fritz that has microphones placed in its 'ears'. It was used on an album in the mid-70s that I have. You do get complete surround when listening with headphones. Like I said, I've been doing this for over 35 years in LA, Burbank, Europe (even Abbey Road in London) and am a member of the AES, SMPTE, NARAS and SPARS. IMHO what you're worried about doesn't really happen.
