I've never fully understood the whole album art issue, but this is what I do.
For ever rip, I go into iTunes Music Library, find the new ripped files. If the album art is in one of the files (or all of the as is usually the case), I Get Info and copy the album art from the Artwork tab. Or Copy Image from Amazon. I the Select All of the new files (the whole album) and Get Info. You then get the Multiple Item Info window. I then paste the artwork into the little Artwork box. Click OK and your artwork should be there next time you rescan. At the same time I also remove Composer Information and make sure that it is not listed as a Compilation.
