Esoterica was exactly what I wanted to avoid.  Twisted + FUSE = iTunes
playing FLAC.  

Converting my entire FLAC library would require a lot of esoteric
programs that do not work as seamlessly.  
I'm using a Mac server now, but may decide to move to another platform
in the future.  But mostly I don't want to re-enter all of my tag
information for files that lack appropriate format.  I tried that once
and found that I was spending as much time re-typing file names and
artists as I was converting.
This solution, as well as the one Nikhil mentioned would allow me to
keep FLAC and use them too.
