JezA,

You're confusing performance with sound quality. Some of the best
performances I have are in mono, and have poor sound quality.

We're talking about judging a hi-fi system's ability to reproduce
recorded sound here, not about the ability of that system to interpret
Bach. And in that context, level-matching is important to ensure you
really are comparing like with like.
