I think other factors, such as noise and radio frequencies that get
generated while the wi fi is on inside the Touch, contribute to the
degradation of sound quality more than the increase in network
traffic.

Less is more. If you're using Touch only as a digital transport, you
should disable any other functionality. Once you do that, the
bit-perfect data stream will flow to the external DAC with the least
possible amount of noise and interferences.
