I'm no expert, but there is more variability in the player in most (all?) cases than in the instrument itself (and even the hall/room where played). And even two very similar instruments rarely sound identical given the wood parts used, humidity where stored, and on and on. I'm just guessing here of course but I think of an instrument as being more like analog...that is, there are things that can cause pretty major differences.
