Sounds like for a player you'd be interested in Squeezebox Touch.  The
Touch maxes-out at 96kHz/24 bits.  Mac-centric shouldn't be a problem. 
The question would be where you would run Squeezeboxserver (the program
which serves the music to you Squeezebox players).  It could be run on
a Mac (but the machine has to on when you want to be listening to your
music).  You may decide to go for a dedicated server, in which case you
might consider the Vortexbox server.  You talk about a particular NAS,
but these boxes are not really ideal for running Squeezeboxserver (if
they support at all), but may be an option for storing your music
library.
Having hardwire ethernet available is a plus - most of the issues
involve getting wireless networking to work reliably, so if your
players and server are on a wired network, that should make things
easier.
There are apps available for iPad to control the system (iPengHD and
Squeezepad... maybe others as well).
MOST folks on this forum (though not all) would say beyond 96k/24bit
you couldn't hear a difference.  The real advantage, as you indicate,
is the ability to access your entire music library immediately, with
great sound quality.  Be aware, however, that these boxes tend to
multiply.  They work well in multiples, and you can synchronize
multiple players running throughout your home, or have each player
supporting its own stream, which is another really nice feature of
these devices.
