Category 7 cable has each cable pair shielded, along with an overall
shield.
If your network is not Cat7 then the screens are floating, and, as one
end is connected to the Touch, which *does* have a connection to the
screen contact you will get an effective radio aerial.

If the screens in a Cat7 installation are properly grounded to a common
point, then you have the opposite occurring - you have a very effective
Faraday shield, and the screens do not act as an aerial.

There's nothing wrong with using Cat7 cable, but, as you have found, a
single piece inappropriately used can be pretty disastrous.
