I have a similar setup but with a few key differences. Instead of a
Vortexbox for a server I have use a dedicated Windows 7 computer with
several external hard drives as my music server. My music ripping and
downloading workflow is the same as above - I rip or download the music
onto my main PC, custom tag it, and then transfer it to the external
hard drives on my server PC and to my backup hard drives which are
connected to my main PC.

And I could not agree more regarding the current state of affairs these
days for music-only players. Once you get everything configured and
working the Squeezebox streaming system +plugins is the best streaming
system available.
