There is great ridge soaring to be had out of Gawler in a good westerly.
It isn't done all that often for some reason.
You can either soar the Barossa range which a 2000 foot aerotow will
easily reach (and there's a good airstrip at Rowland Flat right at
the bottom of the hill) or turn left onto the ridge just past
Freeling run up that for a way and then transition to ridge behind
that and run up to Burra and back. You may not get home but you'll
have had some great fun.
I've managed to transition from the Barossa Range to the range behind
Freeling, run to Burra and back by changing ridges and then then got
back to Gawler.

Grampians mainly seem to attract pilots looking for wave, so not
sure if the western slopes would produce any ridge lift.....?
