Have you looked under Language Settings > Options > Writing Aids in the
online help. The help is minimal, but it does discuss how to edit a
dictionary. If you think any of the online help is incorrect or lacking
in substance file a "bug report" or issue on Issuezilla asking for it to
be enhanced.

To access the section of the OOo options that deals with editing the
user-defined dictionary go to --> Tools > Options > Language Settings >
Writing Aids. The only default dictionaries that are editable are the
Standard and the IgnoreAllList.

As far as editing the other dictionaries, why? when the spellchecker can
use any selected user-defined dictionary. If you want to add words to
the official OOo dictionaries, I believe that the protocol is to file a
"bug report" or issue on Issuezilla
