You would have to probably hack that Class (just copy and rename) and figure out which part of buildRegularPolygon() to comment out or rewrite so that it doesn't build the inside faces.
The down side is there will be some trial and error, and using that class you with be wasting alot of space on your bitmap texture (if you use a bitmap). The good side will be when you figure it out, it won't take too long, and you'll feel really proud of yourself :) I remember I did the same with plane to make a hole in the middle, and it couldn't have took more than an hour, and I had a class that did everything I needed, since I customized it. It's also a good learning experience.
