Currently I am using 2 x 160GB, 2 x 200GB, 2 x 300GB, all 7200rpm.... all in a LVM, using ext3 filesystem. I can't put them in a stripe set because they are different sizes... so that causes a pain....

Also note that is idle percentage is just about 0%, which means that
he is limited by the speed of his backuppc server.
To reduce the iowait time, you need faster disks. What kind of disks
do you have your backuppc data pool on? For backuppc, the faster the
seek time the better, so 15k RPM disks in a RAID 10 setup (the more
spindles the better) would reduce that number.
The system time seems pretty high to me (on my systems system time is
about 1/3-1/5th of user time during backups), what filesystem are you
using?
