Thanks for the reply - very informative! After looking it all over, I'm strongly in the keep it simple camp. Since I'm running BackupPC on a pretty low spec server, and I've got room for one more, I think option 1 you presented is my best bet: 1) Run two BackupPC servers and have both back up the hosts directly.
With this method I could continue to use low spec (read: cheap) servers and alternate the backup days between the servers, giving time for more thorough virus scanning of the backed up files. Or maybe I could just spin up a virtual machine and back up the vm file like I do with the other virtual machines. Either way, good point on the hard links.
