I am new to Bareos but have been using Bacula for years.

If you only want one Director, then yes.  I have two servers running Director.  
The second on uses Storage on the first.

I think like me, most people are not working on the weekend so there is now new 
data to be backed up.  I run Daily M-F, Weekly Sat, Full 1st Sat.  no backup on 
Sunday.

This directive is particularly useful for restricting the size of disk volumes, 
and will work correctly even in the case of multiple simultaneous jobs writing 
to the volume.

If you do not need to restrict data size on you tape then, you do not need this 
option.

This is up to you.  If you do not need to distinguish between your tapes then 
one pool is fine.  I have three pools, Daily Weekly Monthly. My tapes are 
labeled AD AW AF.  Separate pools do allow for Job and File retention options 
per pool and allow for better recycling.  No need to have Daily tapes last as 
long as your monthly tapes.

Other then a second server I do not back up any of my other computers, around 
35, through Bareoa/Bacula.  Important information is stored on a shared network 
drive from the main server.  That is what I use Bareos for.
