Unless you believe that the encoding was incorrect to begin with, the
"Reopen using Encoding" command on the File menu should do the job for
re-reading the file in the desired encoding.

Splendid, thanks ! The coding of the database is indeed ISO-Latin-1, I used "Reopen using Encoding", then altered the file type to Mac and the coding to Mac and all seems to be well. It would have been good to have had some vague notion of what was going on, but I'll make do with the happy ending.
