Does View > Balance and Fold, (conveniently available at Cmd-Shift-B)
do what you want? Balance and fold in one keyboard shortcut. I
actually prefer that over clicking in the gutter, as I can do it
without leaving the keyboard. I've also added a keyboard shortcut for
Unfold Selection as well. I'm still teaching myself to start using
these, but it seems to work well so far.
