Just a shot in the dark but I'm going to guess that the difference is the following: Both options cancel execution. Don't Zap remembers any changes you made to the "sheet" (formerly known as a dialog) for the next time you open it. Cancel forgets any changes you made. That may be a UI thing that never really caught on but I used to love it in the old modal find dialog!
