I too have been perplexed by how this works and am still stretching to get my 
head around it. Maybe some of us could work off-list to prepare a definitive 
document on how to convert a web site from one encoding (windows-latin1 a.k.a. 
cp1252) to another (utf-8), start to finish, using BBEdit.

I've had to do this a couple of times now and am still unable to say exactly 
how I did it (or even if it's done right).

We can post the result to the list if you want.
