Steve, Have you seen the section on Syntax Coloring on p. 212 of the Manual? Make sure that Syntax Coloring is checked in the Editor Defaults preference pane. If the built-in c and php coloring doesn't color personally defined variables, then I doubt that it's a do-it-yourself project.
