Several of the programs I use on both OSX and Windows allow me to define which special characters are considered part of a word when double clicking. iTerm2 on OSX does, for example, so it's definitely possible and not an Apple restriction. I'd suggest you submit an enahcement request to Barebones. I'd certainly support that as a feature.
