Once upon a time there was a tool that, when used once, would tell Finder 
to open all TEXT files in BBEdit rather than Teach-Text (remember that?) or 
TextEdit. It's been a long while - and several iterations of Mac OS - since 
I've used that capability, but now wish I had it back. Can't seem to find 
out how it was done, but sure would like to! Anybody know how this can be 
done these days?

Now using BBEdit 9.6.3 on OSX 10.7.5 Lion.
