To expand on François' suggestion. Select the file you want to always open in BBEdit in the Finder and choose "Get Info..." (Cmd-I) from the File menu. Find the "Open with:" section and select "BBEdit.app". Then hit the "Change All..." button to apply that setting to every file of the same type.
You need to do it once for each file extension (.txt, .html, .lasso, etc.) and once for files with no file extension, but it usually does the trick.
