I was interested in your peeling the mesentary - taking the fat off it.  WE have been getting fatter and fatter mesentarys and were wondering how to deal with it.  I was curious as to why they were so fat - as the ones we used to get  in NZ when I first learnt prep making were not nearly so fat. You could pick one up and see through it - I think Peter Proctor has a picture in "Grasp the Nettle".
I was wondering if it was the breed of cows, or the Artificial Insemination - all from one  type?
 
We have also begun hanging our mesentarys for the summer in cages to keep the birds off, as in the notes of Steiners Lectures Steiner actually says to hang the bladders, mesentarys, and sausages of chamomile!  It has worked really well with the 506, as the hanging seems to melt the fat off and we get a lovely composted dandelion stuffing after they have been through the winter burying.
 
Do you use a piece of pipe to stuff the chamomile into the sausages?
We use a bit of plastic ag pipe (1" diam) and slide the piece of intestine up onto it, and then with a piece of thin bamboo, stuff the chamomile flowers into the intestine till it is full.  I will see if I can get my pictures on line so you can see!  It makes it really easy to fill and we keep the flowers dry.
