I just got back from Threshold Farm, upstate ny, and Hugh Williams [Aussie] 
showed us what he learned for the mesentary.  As the intestine is gently 
extended and cut into sections, the isles of mesentary are split apart {this 
is actually like unsticking two wet pieces of paper} and the sheets are 
separated from the small intestine.  The fat is left because that marks the 
outside of the sheath material.  The pieces are placed on wax paper until 
ready for use, which is pretty soon after all is processed.  The sheaths look 
like little angel cloaks...SStorch
