Thanks Dennie. I think that is getting me closer. I can now mount the SD on my Mac. FYI to anyone reading this for similar help: If the Mac doesn't see the ext4 partition a VirtualBox VM will not work as it doesn't connect to the VM at all.
I can now see and edit the uEnv.txt file. I'm not up and running yet but that gives me some more to play with.
